Acadian Cod with Egg Sauce

Ingredients

  • 1-1/2 lbs salt cod bits
  • 2 cups milk
  • 4-1/2 tbsp flour
  • 1 tbsp butter
  • 4 hard-boiled eggs
  • salt and pepper to taste

Instructions for Preparation

Soak codfish in cold fresh water overnight. In the morning, drain the water. Put fish in a pot and add cold water. Bring to a boil and let simmer for half an hour. Then drain the water off. Put in a serving dish and add egg sauce.

To make egg sauce:

Place milk in saucepan over medium heat. Gradually add flour. When thick, add salt and pepper, butter, and eggs. Pour over fish. Serve with potatoes and vegetables.
