Baked Halibut – Yarmouth Style

Ingredients

  • 1-1/2 lbs. halibut (1 piece, preferably the tail)
  • 1 small onion
  • 2 bay leaves
  • A roux of melted butter, flour, salt, and pepper

Instructions for Preparation

Remove black skin from halibut. In a suitable baking pan, place a slice or two of onion and a couple of bay leaves. Add the fish with white skin down. Make your roux and spread it over the fish. Bake at 400 degrees until fish separates easily from the bone. Don't overcook. Serve with a Hollandaise sauce or a mayonnaise mixed with lemon juice and chopped pickles.
